The Clover Club – Spring has Sprung

It’s a new month, which means a new cocktail of the month. This time, I’m going way back to pre-prohibition times to bring back one that’s a favorite of mine.
The Origin
This is a pre-prohibition drink, so it’s got history behind it. In this case, it goes back to the late 19th century (post 1882), from the city of Philadelphia. The drink was named after a social club opened in the Bellevue-Stratford Hotel. Which is where the drink is commonly believed to have been invented, for fairly obvious reasons. The first published recipes started showing up in the early 1900s, with mint being a common addition. The drink faded from popularity fairly quickly, and has been in obscurity for quite a while. Even now, it’s not a common sight on cocktail menus.
The Recipe
- 4 parts (2 ounces) gin
- 1 part (0.5 ounces) lemon juice
- 1 part (0.5 ounces) raspberry syrup or grenadine
- 1 egg white (can substitute aquafaba for vegetarian/vegan versions)
To make this drink, we’ll start a glass chilling (I stick mine into the freezer), then put the ingredients into an empty shaker. Then the next step is to do a dry shake. This is shaking without ice, the purpose here is to aerate the egg white and integrate it. Keep a firm grip on the shaker when doing the dry shake, unless you want a mess. After dry shaking for 15-30 seconds, add ice to the shaker, seal it and shake until chilled. Double strain (Hawthorne/Cobbler and fine mesh is the default) this into the chilled glass, and garnish with some fresh raspberries.

Variations
The Pink Lady is a big one, swapping out some of the gin for some applejack, and stepping up the lemon (that one prefers grenadine to raspberry syrup). As the original recipe calls for raspberry syrup, grenadine itself is a variation on the original recipe. You can also swap out the syrup for a different fruit syrup or even a jam/jelly/marmalade.
Batch Prepping
Anything with egg whites does not lend itself to batch prepping, as the foam (which is the draw of the egg white), will not last forever. If you’re planning on doing a large number of these though, I would highly recommend separating out the eggs ahead of time, and measure out ~2 tablespoons per drink.
Mocktail Version
Finally, I’ve given you something that can work as a non-alcoholic drink. Raspberries, lemon, and sugar go together quite well. Now, if I’m making large amounts of a mocktail version of this, I would likely mix up a raspberry lemonade ahead of time, and then add egg whites just before shaking. If you want to avoid the foam of the eggs (for health or dietary reasons) and want to lighten it up, you could top with pop, seltzer, or club soda.

The Pink Lady looks, predictably, remarkably girly. On that note: I kinda hope pink (stop capitalizing the fucking color, auto; it’s more important than the stage name) would go back to being a boys color, like it used to until IIRC the early-mid 20th century. Red is obviously a universal DANGER color. Blood. We get it. Pink is the kinder, gentler, not all-the-way variety, the polite rough ‘n tumble version for kids.

My autocorrect has been going increasingly rogue. Capitalizing random words and then insisting it stay that way, even after I change it.
“Were” becomes “we’re” and vie-versa. And some really odd ones, like type 2 letters and a whole word appears while I type the rest.
Dictation is less useful. I used to dictate any time I could, but now it doesnt take punctuation like it used to so typing myself is often faster than fixing the errors.
I am not sure how something like this can get worse over time. AI can now easily pass the Turing test, by my spell-check gets confused?

Beefeater Gin was my go-to for a mid-grade. Not a big $ bite and it’s “Good Enough,” just like that amazing Korean burger joint’s slogan.
The two gins that I stock at home are Beefeater (for G&Ts, Negronis, Gin Rickeys, Corpse Reviver #2s, and Singapore Slings) and Plymouth (for Aviations, Ramos Gin Fizzes, French 75s, and the occasional Martini.)
There are lots of different London Dry Gins, and some are probably better, but I don’t think that anything hits the price-performance point of Beefeater.
Haven’t been able to go out to meet folk cuz $, cuz booze bad for me, and cuz folk don’t just go out to meet folk. ‘Spose that’s always true, but miss going out to the bars in Korea and you’re always, always gonna find someone to talk to. Sparkling water is the fucking worst. For me, literally undrinkable. I’ll spit it out. (Politely swallow and not make a scene. I’d be a great hooker.) Same with sweetened ice tea. Yuck. Unsweet. With lemon, if possible. Other than that? Just go for a coke and be done with it.

I switched over to LaCroix from sodas this year. I wanted the change, so I stopped being horrified by lack of sweetness and chemicals. I grew a taste for it. It is definitely an acquired taste after guzzling sodas for years.

Before the internet we vastly over estimated the percentage of extroverts because all of us had to leave our houses for various purposes and as a result could be convinced to go out for entertainment purposes as well. Then we got the internet and the one good thing to come from Covid, contactless food delivery and we realized it was possible to avoid other people almost entirely. You 5 extroverts can hang out together at a bar. The rest of us are in our climate controlled caves, comfortably letting ourselves go.

Reading about the Great Trump Oil Fiasco of ’26, I am seeing a pattern emerge. “Renewable energy” is apparently not subject to demand based price increases. While oil and gas and coal prices are spiking, solar panels and windmills just get cheaper and more plentiful, no matter how much demand increases. And they are not subject to any sort of potential geopolitical availability restrictions. They are truly miraculous. Once they are in place, they provide free unlimited electricity forever.
