We had a student jazz ensemble play a set in our main dining area, and eventually Prime and I retreated to the upstairs room where we could open a bottle of wine in relative peace. There WAS a table of giggly female students next to us, all Eastern European (Ukrainian maybe), taking group duck-lip selfies and sounding just like Natasha. They were all dressed nearly identically with shorts and extremely tight white midriff t-shirts with slogans on them like, “I’m a handful- and so are my tits.”
Clean up will be fun.

We’d been trying to avoid nitrates, so we had been buying “uncured” bacon (side bonus, no sugar). We had noticed that any uncured products seemed to uniformly list a “cultured celery extract” in the ingredients. A little odd, but it’s just celery, who cares.
Then the wife sees a short video on facespace* where a guy is explaining that the celery extract is a source of natural nitrites, and the culturing converts the nitrites to nitrates, resulting in a level of nitrates that is higher than the level present in normal cured bacon. So the “uncured” label is technically true (no nitrate cure added) but is misleading if you are assuming no cure == no nitrates. And in the same video, the guy dismisses the idea of avoiding nitrates at all, saying the purported link between nitrates and cancer has been disproven. So now we’re back on high test bacon.

Yes, that one is amusing – “No nitrates!” in big bold letters followed by celery extract in small print. So you exchange a known dose of nitrate for an unknown and, in the end, most of the time higher amount. But it’s ‘natural’. I’m not particularly worried about nitrates, but finding bacon without sugar is pretty challenging, so I just end up making my own. Well, it’s not really bacon as I don’t use a cure, more like smoked pork belly. Cut pork belly in bacon-slab like units, dry season (or brine if you want) for a few days to a week, smoke low for 5-6 hours with wood of your choosing. Single pork belly makes enough bacon-like substance for about a month or two for me at $2-4/lbs.

From what I’ve read (and I’m not saying that’s conclusive) nitrates have no significant effect in the amounts that are typically consumed by humans. I know some of the studies claiming to “link” them to cancer had some questionable practices, like feeding an absurd amount to rats that no human could ever consume in that proportion. I think one of them gave them an amount (claiming that it “caused cancer”) that was equivalent to a human eating 25 pounds of bacon every single day for several months.
Now, there may be perfectly good reasons to eliminate bacon or make that delicious-sounding bacon that you specified, like if the sugar and fat content aren’t a good fit for your particular diet and exercise levels.
Other ripple effects of the federal job cuts may appear in the D.C. suburbs in Maryland that U.S. government work has helped turn into the country’s two wealthiest majority-Black counties, says Kris Marsh, a sociologist and demographer at the University of Maryland and author of The Love Jones Cohort: Single and Living Alone in the Black Middle Class.
