The health inspector came to our YMCA summer camp kitchen once a summer. Never looked in the freezer. Only looked in the fridge for covers and dates on the food stored there. Made sure the dishwater was hot enough. Inspection took less than 20 minutes.
It wasn’t the health inspector that magically made the kitchen (or the food produced there) safe. It was my sorry ass mopping the floors, cleaning out the fridge and freezer, emptying the mice traps, shooing away the chipmunks, bears, and raccoons, scalding my hands in hot water, emptying the garbage. Because it was the right thing to do.
