I’m going to phone it in for the cocktail this week, we’ll make:

Mulling Spices

  • Cinnamon/Cassia sticks
  • Cardamom pods
  • Allspice berries
  • Whole Clove
  • Star Anise pods (broken are perfectly fine here)

Go with an approximately equal amount of all the spices but the cinnamon/cassia. Break up the cinnamon/cassia sticks into about 1″ long pieces, and lightly crush the rest of the spices. Feel free to add or remove spices as you see fit. I’m partial to a little dried orange peel and ginger, some people like some black pepper, and others like to add some juniper. To use the spices, take a tablespoon for a 750 ml wine bottle, up to 3 tablespoons if you’re doing a full gallon of cider, put into a muslin pouch (for easy straining), and drop into either a pot or crockpot with your beverage of choice. Heat, but do not boil, for up to 30 minutes on the stove top, an hour (on low) in the crockpot.
