For the cocktail this week, I’ll go with something that I do not like, but I should probably make people aware of, coquito. The simplest explanation is to think of Puerto Rican egg nog (even though there’s no eggs in this recipe, there are recipes that call for eggs).

Coquito

  • 56 ounces sweetened condensed milk
  • 48 ounces evaporated milk
  • 24 ounces cream of coconut (and here’s where I tap out)
  • 4 teaspoons vanilla extract
  • 4 teaspoons ground cinnamon/cassia
  • 1 teaspoon ground nutmeg
  • 750 ml rum
  • Cinnamon sticks

In case you didn’t figure it out from the volumes, this is for a batch. Scale up or down as you see fit. To start with, add all the ingredients other than the rum to a saucepan. Bring it up to a simmer, stirring constantly. Let it simmer for a couple of minutes, and then remove from heat and let it cool down. After it’s cooled, add the rum, and stir to combine. After this, put it into bottles/mason jars (and add one cinnamon stick to each jar) and store it in the fridge. To serve it, pour into a glass over ice, and garnish with cinnamon sticks and a dusting of nutmeg if you are so inclined.
