Based on things I have read, our refineries (some of them, anyway) are better suited to handle heavy crude from Venezuela than the lighter stuff we pump out of the ground here.
We’re the only country that can refine their dirty crude without mixing it first with cleaner oils.

So, a while back I remarked how I habitually picked up Red Boat when I buy Fish Sauce. I looked into the company and I’m confused.
So, the guy who founded it grew up in Saigon, then fled to the US, where he went into Tech for a few decades before getting disappointed in the Thai fish sauce on the market, so he visited Vietnam, bought a small factory to make his own. He couldn’t make money unless he sold at western prices, so his primary market was initially just the US, but is still mainly western countries.
So the owner is born in vietnam, lives in the US, the product it made in Vietnam, and almost only sold in the US.
Is it a US or Vietnamese company?

I have only ever bought fish sauce once but did not find enough uses for it plus life intervened and I found myself not cooking from scratch so much anymore.
One advantage Red Boat has is it also comes in tiny bottles. I did not need a half liter of fish sauce.

Apparently we need liters, several at a time. Mrs F is not using so much anymore as her cooking is less often and we still have a few back up bottles of ‘nuoc mam’. She also has stopped eating the hot, hot peppers that she still has lots of frozen and pickled from years gone by.

That dude had an interesting life. Back when I cooked, I’d rarely (if ever) cook fish, but I certainly wouldn’t be putting fish sauce on it. Seems to be missing the point, but the bigger point is that fish is tremendously overrated as food. Meh. That’s too harsh. It’s just fine. After tuna and salmon, the rest of the fish all taste the same.

I never liked fish much as a youngster but I appreciate it more nowadays. I flurv salmon – it’s probably the only fish I might consider ordering when chicken or beef is also available.

*reads* Seems I was mistaken someplace. I’ll narrow it down: Fish is overrated. To make sure *everyone* is displeased, I’ll go further: Food is overrated. Just eat calories, in decent proportions to proteins, fat, etc, and clear it out with fiber. Don’t overdo caloric intake, and don’t forget to eat, neither. Some of it tastes better than others, I suppose, but that’s far too individual to make any umbrella statement.
People make an awful lot about food. Mostly cuz people used to eat together, I suppose. Had to fake things to say in the (likely?) case ya didn’t really wanna or couldn’t say real things.
I’d prefer a perfectly red filet and some choice sides, etc to complete the whole meal. But considering the time and cost of getting that food, if I do it myself or pay someone else, or if I prepare, cook and clean up, it’d have to be an event for it to be worth the trade offs vs, uh, something frozen I’m gonna bake for $6. Or granola bars, pineapple, yogurt. Well, that’s pretty much all I eat unless someone else is paying. I just don’t see the big deal.
Meh. I rather like cooking for people when there’s occasion. Otherwise? Uh. I’ll take about 1,500 calories a day, please. (Or whatever I eat.) Thx.
In my dotage I don’t entertain much anymore so oh well. I still like to experiment once in a while. I also like to pop a frozen Stouffers into the microwave.

At any rate I’ll have all the parts in hand within weeks. Then I can tear down the bike, strip the old paint, and start over.
I will be replacing everything except the frame, handle bar stem, and handle bar. Because everything else is subject to wear.
It will essentially be new bike when it is over.
Of course, all projects can spin off into disaster. Part of excitement I suppose.

I’m the opposite. I am not a tinkerer, at all. Tinkering is something I work long hours at shit I actually enjoy in order to earn enough money to pay somebody else to do.

My next big financial ‘purchase,’ commitment, will afford me infinitely more space and time for fun than at present. NOT tinkering will bring much fun. I’m doing just fine, here. Went to a street festival in Indy with the 6 and 11yo with bro and parents. Good lord, I will say, an exorbitant amount of poison frog dye was congealed in the hair of attendees. I’m just ‘not used’ to having my own place. Last time was for maybe three months in 2023 in Kokomo, didn’t have time to ‘settle’ and think about scenes.
Will be quite an interesting adventure. But much to come before that can be realized. *plugs along*

If you go the route, I recommend adding a dry shake (10-15 seconds with no ice, it’ll try to pop on you) and double straining (one a fine mesh, strains out any proteins that coagulate due to alcohol/acid). Neither are strictly necessary, but will give you the best foamy top that you can decorate with a couple of drops of bitters.
I know about the dry shake but I don’t have a fine strainer and sadly I tossed my remaining bitters bottles during a recent move. They were like a dozen or more years old anyway.
