We went over the definition of a cocktail last week, next step is to simplify it down to three things that you want in balance: Sweet, Bitter, Strong.  Sweet and bitter refer to three of the items we discussed last week (Sugar, Water, Bitters).  Strong simply refers to a spirit of ~40% ABV (80 proof).  So you’ve got your bottles of bitters, your flavored simple syrups you made, and several bottles of liquor that you like.  Where do you go next?
